Grain-Free Cardamom Chocolate Chip Cookies
These cookies are perfectly sweet, soft, and packed with flavor! They are naturally gluten-free (made with cassava flour), refined sugar-free, and can be made vegan. Enjoy!
Dry Ingredients
1 cup cassava flour
1/2 cup honey (or 1/2 cup coconut sugar)
1/2 tsp ground cardamom
1/2 tsp salt
3/4 cup of chopped dark chocolate
Wet Ingredients
1/4 cup butter (or coconut oil/vegan butter) a room temp
1 egg (or vegan replacement)
2 tsp vanilla extract
Directions
Pre-heat oven to 350° F and line a baking sheet with parchment paper.
Mix butter and honey together util it looks creamy.
Mix in the egg and vanilla until fully blended together.
Stir in the cassava flour, salt, cardmom, and chocolate. (I also added cocont flakes — feel free to experiment with nuts/seeds!)
Place rounded teaspoon-sized balls of dough about 2 inches aprt on the lined baking sheet.
Bake about 12 minutes or until light brown.
Cool completely before removing.
